Dinner Tonight: Not Really Reeseā€™s Bars

Theoretically, the recipes in Dinner Tonight are supposed to be fast and healthy. And Tom Mockensturm, who sent in this recipe for what we will call Not Really Reese’s Bars, readily admits “these are not healthy” — or fancy. But, he says, “we always bring home an empty pan after taking these to a potluck.”

We can see why. The recipe came from his son, who lives in Greensboro, N.C.

Not Really Reese’s Bars

1 cup (two sticks) butter, melted

1 cup plus 4 tablespoons creamy peanut butter

2 cups powdered sugar

2 cups graham cracker crumbs

1½ cups of semi-sweet chocolate chips 

Mix the melted butter with 1 cup of the peanut butter, the powdered sugar, and the graham cracker crumbs. Press into a 9-by-13-inch pan.

Melt the chocolate chips and the remaining 4 tablespoons of peanut butter in the microwave (about 30-45 seconds on high). Spread over the crust.

Cover and chill to set.

Yield: 24 bars
