Many years ago, the good folks at the Akron Beacon Journal ran a column called Five Easy Pieces, which consisted of recipes that could be made from just five ingredients. Sue Robinson, of Temperance, saved one of these recipes for a Shrimp-Orzo Bake, and it was so good and so simple that she wanted to share it with the readers of Dinner Tonight.
Shrimp-Orzo Bake
1 cup orzo pasta
1 tablespoon butter
1¼ pounds peeled medium shrimp
2 (14-ounce) cans diced tomatoes
6 ounces garlic-and-herbs-flavored feta cheese crumbles
Preheat oven to 400°.
Cook orzo in boiling water according to package directions, and drain. Melt butter in skillet over medium heat and cook shrimp until pink. Add orzo, tomatoes, and cheese. Put in a casserole dish and bake 15 minutes.
Yield: 4 servings
