Is it worth making dessert for one? I vote yes!
Easy Individual Apple Crisp can be eaten plain or straight out of the oven for a comforting, homey, low-fat dessert. You can get fancy and celebrate by using the apple crisp as a fruit topping and add chocolate for panache. The most difficult thing about this recipe is peeling and slicing the apple.
Making it even quicker, I used two tablespoons of prepared granola for the topping. You can choose a brand from the store or make your own. (My two favorite granola recipes are on www.kitchenscoop.com.)
Even if you're feeding a crew, Easy Individual Apple Crisp makes good portion sense and looks beautiful, too. Just make each serving in a ramekin and bake on a baking sheet for even browning and ease.

Easy Individual Apple Crisp
Start to finish: 5 minutes prep, 30 minutes baking
Yield: 1 serving
1 sweet apple such as Gala, peeled and thinly sliced
1 teaspoon butter, or more to taste
Pinch apple pie spice
2 tablespoons prepared granola
Ice cream, optional for serving
Chocolate sauce, optional for serving
Preheat oven (or toaster oven) to 350 degrees.
Place the apple in a ramekin or other small ovenproof dish. Top with butter, spice blend and granola. Bake 20 minutes for crisp tender apples or 30 minutes for soft apples. Serve warm over ice cream with chocolate sauce if desired.
