Crepes make a great holiday dessert

12/13/2009

Crepes are a very thin, unleavened pancake made with a thin egg batter and cooked on a very hot pan. Then usually each is filled with a sweet or savory filling.

Crepes can be made ahead, stacked between sheets of parchment or wax paper, and then wrapped in plastic wrap and refrigerated until needed. Or pre-made crepes can be bought.

Mexican Christmas Crepes are filled with Haagen-Dazs Dulce de Leche ice cream and then placed on Mexican Chocolate Sauce, sprinkled with sugar, and served. Dulce de leche is a sweet caramel made from milk and sugar which can be used as a dessert or a sauce; in this case, the ice cream company has used it to flavor ice cream.
