Recently released inspection reports of Lucas County food-service operations

Violations:

Feed Lucas County Children Inc., 1501 Monroe, inspected Oct. 11. Ground beef stored above whole beef in walk in cooler. Ground meat should be stored below whole meats to avoid cross contamination. Inspector: Nathan Fries.

Spicy Tuna, 7130 Airport, Holland, inspected Oct. 9. Food products must be at least six inches off the flooring throughout the facility to protect foods from contamination. Food found on the floor in the walk-in cooler and freezer. Inspector: Sara Becker.

Granite City Food & Brewery, 2300 Village West, Mau-mee, inspected Oct. 9. Four-drawer cooler under the charbroiler is holding foods slightly warm at about 44 to 46 degrees. Potentially hazardous food must cold hold at 41 degrees and colder to prevent bacteria growth. Manager said call will be made for service immediately. Remove food from the unit until repaired. Inspector: Becker.

Comfort Inn & Suites, 1702 Tollgate, Maumee, inspected Oct. 17. Hand sink is blocked with various items. Clear this area to allow for the use of hand sink and facilitate good hand washing practices. Employee handling/preparing food and beverages without any hair restraints. To prevent potential contamination, employees handling exposed food must wear effective restraints such as hats and hairnets. Inspector: Paul Bauman.

Little Miracle Homework Help/Ext Day, 7800 Erie, Sylvania, inspected Oct. 17. Facility is not using the dish machine to properly wash, rinse, and sanitize the children’s water jug. Facility uses paper and plastic products most of the time. When an item must be washed, it must be placed in the under- counter dish machine. The wash cycle must reach 150 degrees and final rinse reach 180 degrees. Inspector: Jennifer Gottschalk.

Kindercare Learning Center, 6367 River Crossing, Sylvania, inspected Oct. 15. Infant room cooler has an air temperature of 52 degrees. The cooler must have a temperature of 33 to 38 degrees to maintain food and beverages at 41 degrees or lower. The bottles and milk were removed from the cooler. Store bottles and milk in the kitchen cooler until the infant room refrigerator can be repaired. Inspector: Gottschalk.

Chipotle Mexican Grill, 3305 W. Central, inspected Oct. 9. White rice is hot holding at 108 degrees and chicken is 113 degrees in the steam table. Food must be held hot at 135 degrees or hotter. Adjust or repair the steam table. No sanitizer detected in the wipe cloth bucket at the cook line. Change sanitizer buckets as needed to maintain quat sanitizer at 200 ppm. Inspector: Kelly Sattler.

Red Lobster Restaurant, 4990 Monroe, inspected Oct. 9. Yogurt used at the bar is being held cold on ice at 51 degrees. This product is labeled keep refrigerated and must be held cold at 41 degree or lower. Hold this product under refrigeration. Sliced tomatoes are being held at room temperature and are 75 degrees. Once cut, tomatoes are a food and must be held cold under refrigeration at 41 degrees or colder. Discard out of temperature tomatoes. Inspector: Sattler.

Sigma Restaurants Inc. dba: Subway, 5840 W. Central, inspected Oct. 9. Under-counter cooler at the front area is holding cheese at 47 degrees. Adjust or repair cooler to food hold cold at 41 degrees or colder. Do not use this cooler for any food until it has reached proper temperature. Unlabeled spray bottles being used in the back area. Spray bottles must be labeled with the names of their contents. Inspector: Sattler.

Burger King, 3130 Holland Sylvania, inspected Oct. 9. Ham lacks required time stamp. Food held based on time in lieu of temperature must be marked to indicate either the time the food was taken out of temperature control or the time that the food expires. Food may be held out at room temperature up to 4 hours before they must be either consumed or discarded. Inspector: Sattler.

White Tower, 1515 Sylvania, inspected Oct. 19. Reach-in coolers holding food above 41 degrees rather than at 41 degrees or colder. Food discarded. Inspector: Stacy Seger.

Tropics Lounge, 1583 Sylvania, inspected Oct. 19. Improper thawing of fish. Follow proper thawing procedure. Inspector: Seger.

Red Wells Roast Beef Shop, 1740 Sylvania, inspected Oct. 19. Reach-in cooler holding food above 41 degrees rather than at 41 degrees or colder. Cooler repaired. Inspector: Seger.

Courtyard by Marriott, 415 W. Dussel, Maumee, inspected Oct. 19. Employee hair not effectively restrained. Employees handling exposed food products must use effective restraints such as hats and hairnets. Inspector: Bauman.

Toledo Zoo/Karoo, 2700 Broadway, inspected Oct. 19. Quat sanitizer dispensing at 50 ppm at the 3 compartment sink. Must be 200 ppm. Inspector: Mike Brady.

Big’z Bar & Grill, 2600 W. Sylvania, inspected Oct. 17. Nacho cheese and soup reheating in the steam table. Food must be reheated on a direct heat source to at least 165 degrees within two hours. Reheat the food using the grill, stove or microwave. The low temperature dish machine at the bar is not dispensing chlorine sanitizer. Service machine. Do not use dish machine until it is reinspected. Dish machine lacks proper visual or audible alarm to notify staff when the sanitizer runs out. Contact Ecolab to install the alarm. No sanitizer bucket was set up in the kitchen. Sanitizer bucket with correct concentration of sanitizer must be set up during hours of operation. Raw shell eggs stored above coleslaw in walk-in cooler. Follow proper storage order. The eggs were personal food; all personal food should be stored away from food for sale. Corrected. Chemicals stored above the food prep sink. Store chemicals below and away from food/food contact surfaces to prevent contamination. Corrected. Inspector: Gillian Wilke.

Tribe’s Tavern, 4002 W. Alexis, inspected Oct. 15. Wet wiping clothes on the bar. Provide a sanitizer wiping cloth bucket to store all in use wiping cloths in. For quat sanitizer it should test at 200 ppm. Check the concentration of sanitizer with the test kit and change the sanitizer bucket as needed. The ice bin has a green hose that is hanging down into the basement and leaking all over the floor. Do not use the ice bin until the drain line is repaired. Pop syrup boxes stored directly on the floor in the basement. The pop syrup boxes must be stored at least 6 inches off the ground to protect from cross contamination. Inspector: Gottschalk.

Pacesetter Park Soccer North, 8801 Sylvania-Metamora, Sylvania, inspected Oct. 17. Boxes of cups stored directly on the floor. Food and food contact items must be stored at least 6 inches off the ground. Sliced cheese date 7/22 in the Coke cooler. Discard the sliced cheese. Food must be labeled with seven-day discard date. Inspector: Gottschalk.

Sylvania Pacesetter Park, 8801 Sylvania, inspected Oct. 17. Chemical spray bottle found in stand. Chemical spray bottles, including water spray bottles must be labeled to allow all employees to know what it contains. No seven-day discard date on open hot dogs in the one-door cooler. Properly label food. Discard the hot dogs if it is unknown when package was opened. Open bag of hot dogs sitting in the one-door cooler without a cover, such as plastic wrap. Provide approved container with a lid to store all open packages of hot dogs. Inspector: Gottschalk.

Pacesetter Park Soccer South, 8801 Sylvania-Metamora, Sylvania, inspected Oct. 17. Bag of open nacho cheese in Coke cooler. Once the bag of cheese is heated in the nacho unit, it must stay hot in the unit at 135 degrees or hotter or must be discarded. The cheese cannot be cooled down once opened and this facility is not licensed to cool food items down and reheat them. Cheese was discarded. No seven-day discard date on open hot dogs in the Coke cooler. Properly date label opened packages of hot dogs. Discard the hot dogs if it is unknown when package was opened. Inspector: Gottschalk.

McCord Junior High School, 4304 McCord, Sylvania, inspected Oct. 17. Dead beetle or moth in the old flour container. Flour was discarded. Wash, rinse, and sanitize container. Continue to check flour and oats when you receive them. No thaw date on the turkeys thawing in the cooler. Properly label foods with seven-day discard date. When placing cold food items on the serving line, place them in the cold serving buffet station surrounded by ice to maintain the items at 41 degrees or lower. The back up items, continue to store in the reach in coolers. Also, you may place cold covered items in the milk cooler to maintain cold hold temperature. Inspector: Gottschalk.

Rudy’s Hot Dog, 3208 W. Alexis, inspected Oct. 18. Food on make line above 41 degrees. Food must be held at 41 degrees or colder. Food discarded. Pies and ham in walk-in cooler lack required seven-day discard date. Inspector: Seger.

East of Chicago Pizza Co., 5345 Heatherdowns, inspected Oct. 17. Dish machine not dispensing chlorine. To effectively sanitize, the dish machine must dispense chlorine at 50-100 ppm. Contact repair service to adjust machine. Ware washing must be done manually until repairs are complete. Lack of date marking throughout the facility. Ready-to-eat food held longer than 24 hours must be marked with a seven-day discard date. Unlabeled spray bottles in kitchen. In-use spray bottles must be labeled with the common name of the product. Various bulk ingredient containers/packages being scooped with cups or other utensils without handles. Obtain scoops with handles to avoid potential contamination of food ingredients. Inspector: Bauman.
