Apple Dumplings

10/10/2000

6-8 apples, peeled and halved (Jonathan, McIntosh, Granny Smith)

Dough:

4 cups flour

11/2 cups shortening

2 teaspoons salt

1 cup milk

1 teaspoon baking powder

Sauce for 4 dumplings:

1 cup brown sugar

1 cup water

2 tablespoons melted butter

2-3 tablespoons cinnamon red hots

Mix dry ingredients. Cut in shortening and sprinkle in milk. Don't over mix. Divide dough into 12 to 16 balls (depending on size of apples). Roll out dough. Wrap dough around half of apple and press seams to seal.

Put individual dumpling in freezer bags to freeze if desired.

Prepare sauce by heating sauce ingredients in small saucepan until red hots are dissolved. Place 4 dumplings in 9-by-9-inch pan one-inch apart. Pour sauce over dumplings and bake at 375 degrees for 35 to 40 minutes.

Serve warm with milk or ice cream.

Yield: pastry and apples for 12 to 16 dumplings
