1/3 cup mayonnaise
1 tablespoon Dijon mustard
1/2 teaspoon ground ginger
1/2 teaspoon sesame seeds
1 11-ounce can mandarin orange segments, drained (reserve liquid)
2 cups chopped roasted turkey
1 cup diagonally sliced celery
1/4 cup thinly sliced green onions
1/2 cup coarsely chopped pecans
Fresh spinach or lettuce leaves
Toasted coconut
In small bowl, stir together mayonnaise, mustard, ginger, sesame seeds, and 1/4 cup reserved mandarin orange liquid for dressing. In large bowl, mix turkey, celery, green onions, and chopped pecans. Pour dressing over mixture; stir to combine. Add mandarin orange segments, tossing carefully. Refrigerate until well chilled. Serve on bed of greens and top with coconut.
Yield: 4 servings.
