Poor Man's Soup

Meatball mixture:

1 pound hamburger

1/2 pound lean ground beef

1 cup raw rice

1 teaspoon salt

Soup:

5 beef bouillon cubes

1 cup chopped celery

11/2 cups crushed tomatoes

11/2 cups shredded cabbage

1/2 cup chopped onions

1 pound package frozen mixed vegetables

2 cups diced potatoes

1 small zucchini, quartered

Prepare meatballs by mixing ingredients together well. Shape into teaspoon-size balls. Set aside to add later.

In 6-quart saucepan, heat 4 quarts of water to boiling. Lower heat and add ingredients for soup, being sure to add zucchini last. Add water to cover vegetables if necessary.

When this mixture is hot, add meatballs and cover for 15 minutes or until meatballs are done. Do not overcook. Serve with cilantro and tortilla chips.

Yield: 12 4-ounce servings.
