Cornish Game Hens for 2

1 or 2 Rock Cornish game hens (1 to 11/4 pounds each), defrosted in refrigerator

Vegetable cooking spray

Salt

Pepper

Cut hens in half with poultry shears and place, cut sides down, on rack in roasting pan. Spray with cooking spray and sprinkle with salt and pepper. Roast at 350 degrees until thickest parts are fork-tender and drumstick meat feels soft when pressed, 1 to 11/4 hours. Serve with wild rice or stuffing. Garnish with spiced apples or cranberry sauce.
