RESTAURANT INSPECTIONS

Recently released inspection reports of Lucas County food-service operations

El Camino, 2500 West Sylvania, inspected May 14. Critical violation: Cover all shallow pans of food in reach-in cooler to avoid possible cross contamination. Inspector: Jeff Neistadt.

Collingwood Deli, 2275 Collingwood, inspected May 14. Critical violation: Po|tato salad received from caterer is 46 degrees, must be held at 41 degrees or less, salad must be taken out of service. Inspector: Debbie Dacquisto.

Little Miss and Mister, II, 3119 Central Park West, inspected May 14. Critical violations: Homestyle crock pots are not acceptable food equipment for heating or hot holding of food. Purchase NSF-approved commercial food warmers. This facility is not licensed to cool down and reheat prepared foods. Foods must be heated and served for one meal at a time. Inspector: James Herzberg.

Speedway, 5904 West Central, inspected May 14. Critical violations: Temperatures of hot foods must be written down every day. Temperatures of cold food refrigeration unit must be written down every day. All packages of frozen hot dogs and sausages must be marked with the date removed from freezer and placed in refrigerator. Inspector: Herzberg.

Fu Yi Chinese Restaurant, 7130 Airport, Springfield Township, inspected May 14. Critical violations: Currently 17 sheet pans of deep fried chicken, shrimp, and pork sitting out at room temperature. Foods must be rapidly cooled from 140-70 degrees in 2 hours and from 70-41 degrees in another 4 hours. Foods must cool correctly to prevent the growth of bacteria. All sheets of food except for one pan of pork must be taken out of service. Three-quarters of a tray of raw eggs sitting out at room temperature. Eggs must be held under refrigeration at all times to prevent the growth of bacteria, remove eggs from service. Rice found drying under the steamer, all foods must either be hot holding or cold holding. Foods must not sit out at room temperature. One pan discarded. Provide paper towels at all times for proper handwashing. Ladle must not be held in water when not in use. Stagnant water will breed bacteria. All foods must be held at least 6 inches off the floor. EOPA-Toledo Lucas County Head Start, 540 Independence, inspected May 14. Critical violation: Sanitizer bucket not set up properly at the time of inspection. The Ohio Revised code requires that all wiping towels must be dipped and stored in a 200 ppm quat 10 sanitizer solution in between uses. Sanitary buckets shall be refresh as needed throughout the day. Inspector: Karim Baroudi.

Wendy's, 3360 Glendale, inspected May 14. Critical violations: Front counter staff engaged in food prep and service found wearing fingernail polish and elaborate jewelry. To prevent food contamination and to effectively wash hands as dictated by the Ohio food code, to the elbows, no jewelry is allowed on hands and arms of food employees, with the exception of a plain wedding band, unless wearing an intact glove at all times, no fingernail polish or artificial nails are allowed. Seasoned chicken not properly date marked. All prepared or processed, potentially hazardous foods must be properly date marked with the date the food was prepared or manufacture's seal broken. The food is safe through the 7th day if kept at 41 degrees or less. Beverage dispensing nozzles were moldy at the time of inspection. Thoroughly clean and sanitize all removable parts of the machine on a daily basis to curb the growth of food borne illnesses caused by mold and bacteria. Inspector: Baroudi.

Charlie's Coney Island, 1572 Spring Meadows, Springfield Township, inspected May 14. Critical violations: At the start of inspection many food items were found out at room temperature on top of the prep top cooler. All potentially hazardous foods must be kept under refrigeration at all times to maintain temperatures of 45 degrees or less to prevent the growth of bacteria. Cook was found frying bacon from a case that was sitting on the floor in front of the grill. Foods are not to be stored/placed on the floor. Do not use single-service side ups in place of serving utensils. All wet towels must be returned to a sanitizer bucket between uses. Do not store open/exposed foods on top of the dessert case. Properly date-mark potentially hazardous ready-to-eat foods once opened these products have a seven-day shelf life if stored at 41 degrees. A glass drinking glass was found in the box of sugar being used as a scoop. Do not use. Cover all foods in the walk-in cooler. Inspector: Amy Brown.

Little Friend, 809 Starr, inspected May 13. Critical violations: Handsink must be cleaned and sanitized thoroughly. Remove the cloths found on the bottom shelf of the reach-in cooler. The clothes cannot be placed in the cooler because they are a contamination problem. Once they are removed, thoroughly clean the cooler and maintain it. Kitchen employee did not have head or hairnet. When preparing and cooking food a hair restraint must be worn. A hat, hairnet or a visor with a hairnet may be worn. Keep a supply of hairnets for employees. Inspector: Jennifer Gottschalk.

Foundation Park Care Center, 1621 South Byrne, inspected May 13. Critical violation: Remove split and broken spatulas from service. Dishwashing staff should monitor all dishware and utensils for chips, nicks, and deterioration. Inspector: Baroudi.

Wendy's, 5166 Airport, inspected May 13. Critical violations: Staff working with exposed food did not have any hair restraints at time of inspection. All kitchen staff shall properly restrain hair while handling food to prevent falling contaminants from falling into food items. Inspector: Baroudi.

Toledo Hilton, 3100 Glendale, inspected May 13. Critical violations: Do not wash and re-use sauce buckets. All food containers must be of a commercial grade, approved for washing and re-using. Turkey breast, lunch meats, prepared/cooked food and other potentially hazardous processed foods did not have any date marking. All potentially hazardous foods must be properly and clearly date-marked with the date the food was prepared processed, or manufacturer's seal broken he food is safe through the 7th day if kept at 41 degrees or lower. A “person in charge” must be present at all times of operation. Ohio revised code calls for that person to be knowledgeable in safe food handling procedures as it pertains to the operation. Inspector: Baroudi.

Spring Meadows Extended Care, 1125 Clarion, Springfield Township, inspected May 13. Critical violations: Store everything off the floor in the walk-in cooler. Store raw meat below pre-cooked meats and vegetables in the walk-in cooler. At time of inspection three raw pork chops and four whole beef loins were stored above prepped tomatoes. Inspector: Brown.

Ruby Jones Diner, 847 South McCord, Springfield Township, inspected May 13. Critical violation: Do not store lettuce in black plastic bags. Supply a food grade bag for proper storage. Inspector: Brown.

The Rose Garden Pizza, 180 Miami, inspected May 20. Critical violations: no hair restraints being used at time of inspection. Provide gloves for use when working with ready to eat foods; gloves must be used with clean hands. Can used for dumping ash trays found near food products and utensils in back bar area. Storage room must be cleaned and organized for proper food storage. Mold in ice machine; maintain clean. Stock all hand sinks with paper towels, soap, and hand washing sign. Delfield 2-door cooler must be repaired and checked by health department before it can be used again. A person in charge who is knowledgeable about proper food handling must be present at all times. Judy's Again, 11407 Corduroy, Jerusalem Township, inspected May 20. Critical violations: thoroughly clean hood above freezer; make sure all foods stored 6 inches or more off floor. Inspector Heidi Sanders.

Moku Bar and Grill, 10905 Corduroy, Jerusalem Township, inspected May 20. Critical violations: do not use three-vat sink for food prep; use an indirectly connected sink.
