Wipe cloths must be kept in sanitizer solution (100 ppm chlorine) and used for wiping down all food contact surfaces. Store all food containers, dishes, food boxes and utensils 6 inches or greater off floor to prevent contamination. Eliminate standing water from clean dish side. Do not store clean dishes on clean dish drain shelf. Inspector: Brady.
