Baked Salmon with Sauteed Spinach

For the salmon:

2 pounds salmon fillet, cut in four pieces

1/4 to 1/2cup Soy Vay Teriyaki Sauce

For the sauteed spinach:

1 pound spinach

2 tablespoons olive oil

1 clove garlic, crushed and chopped

2 tablespoons freshly grated

Parmesan cheese

Cook's note: This is a "healthy fat" recipe but it is not low in salt or sodium.

To prepare the salmon: Place salmon on baking sheet. Poke a couple of holes in the top of salmon with fork. Pour Soy Vay Teriyaki Sauce over the salmon and bake at 350 degrees for 20 minutes or until it flakes easily.

To prepare the sauteed spinach: Place spinach in a large saute pan with olive oil. Add garlic, lightly mixing. Cover. Saute to desired doneness, about 3 to 5 minutes. Plate salmon with spinach. Top spinach with grated Parmesan cheese.

Yield: 4 servings
