For the filling:
1 13-ounce can evaporated milk
1 small package lime gelatin
1 3/4 cups boiling water
1/4 cup lime juice
1 cup sugar
Green food coloring, a few drops (optional)
For the crust:
2 cups chocolate wafer crumbs
1/3 cup melted butter
1 8-by-12-inch glass baking dish
Shaved semisweet chocolate, garnish
To make the filling: Chill evaporated milk in medium bowl in freezer compartment until small amount of ice forms. In large bowl, dissolve gelatin in boiling water. Chill until partially set in refrigerator. (Meanwhile, make the crust.) When set, whip gelatin until fluffy. Stir in lime juice and sugar. Whip milk; fold into gelatin. Add a little green food coloring, if desired.
To make the crust: Combine crumbs and butter; press into bottom of 12-by-8-inch glass dish. Pour whipped gelatin mixture over crumbs. Chill until firm. Top with shaved semisweet chocolate. This can be made the night before serving. If so, don't put chocolate garnish on until ready to serve.
