Restaurant inspections

Recently released inspection reports of Lucas County food-service operations:

Cafe Marie, 570 Dussel, Maumee, inspected July 10. Critical violation: Whipped butter at 67 degrees. All potentially hazardous food (PHF) being held cold must be at 41 degrees or less. Three noncritical violations. Inspector: Paul Bauman.

Texas BBQ Factory, 5001 Monroe, inspected July 10. Observed improper cooling of hot RTE foods. Rib tips cooling at room temperature are 111 degrees. Rib tips cooked and cooled previous day are at 42 degrees. Roods must be properly cooled so that they cooler from 135 to 70 degrees in two hours or less and from 70 to 41 degrees within the next four hours. Rib tips are improperly cooled in tightly covered tubs. Cool meats on tray in a single layer on speed racks in the walk-in cooler. Canned baked beans and canned cheese sauce must be cooled down to 41 degrees or less within four hours from time can is opened. Raw chicken breast in the walk-in cooler is 45 degrees. Chicken was cut and cleaned previous day. Only prep a small amount of chicken at a time so that it does not stay out of the cooler more than twenty minutes. Hold all PHF cold at 41 degrees or less. Canned baked bean and cheese sauce must be cooled down to 41 degrees or less within four hours from the time the can is opened. It is suggested chilling the product overnight so that the product is already cold once it is opened. Found cooked rib tips hot holding in the microwave. Cooked foods must be held hot in the steam table or in the walk-in cooler. Cold salads and dressings held at improper temperatures. Food discarded. A large container of black sauce is stored directly under the three-compartment sink and has water accumulation. Do not store food items under sinks. There must be a knowledgeable person in charge on premises during hours of operation. Two noncritical violations. Inspector: Kelly Sattler.

Monette's Market, 5717 Secor, inspected July 10. Critical violations: On the sales floor in the deli, end refrigerated case was found not functioning properly and all PHF were removed from service. Additionally, numerous blocks of cheese were out on table with no temperature control. Cheese removed from service. Bulk food that is available for consumer self-dispensing must be prominently labeled with the proper information. Three noncritical violations. Inspector: Steve Perrine.

China King, 1308 Michigan, Maumee, inspected July 10. Critical violations: Chicken at holding at room temperature. All PHF must either be maintained cold at 41 degrees or less or hot at 135 degrees or more at all times. When prepping foods, stay on task and put refrigerator as soon as possible. Chicken discarded. Set up the three-compartment sink correctly to properly wash, rinse, and sanitize dishes. Four noncritical violations. Inspector: Sara Becker.

Bittersweet Inc., 12660 Archbold Whitehouse, Whitehouse, inspected July 11. Critical violation: Dishmachine is not maintaining proper wash and rinse temperatures. Use three-compartment sink until unit is repaired. One noncritical violation. Inspector: Becker.

Bob Evans, 2433 South Reynolds, inspected July 11. Critical violation: Observed cook leaving station and conducting non-prep activities and not washing hands before returning to cooking. Hands must be washed when changing tasks and before handling food. One noncritical violation. Inspector: Bauman.

Gourmet of China, 126 Chesterfield, Maumee, inspected July 11. Critical violation: Opened and prepped PHF not marked with discard date. All opened and prepped PHF held longer than 24 hours must be labeled with a seven day discard date at 41 degrees or four days at 45 degrees. Inspector: Bauman.

Toledo Plaza Hotel and Suites, 2340 South Reynolds, inspected July 12. Critical violations: Dishmachine not sanitizing properly at time of inspection. Contact repair service. Three-compartment sink must be used for all wash, rinse, and sanitizing of utensils and dishes. Temperature gauges on machine also need to be repaired. Open PHF being held without adequate date marking. All PHF held long than 24 hours must be marked with a seven day discard date. Eggs stored above other food products in cooler. Follow proper storage hierarchy to prevent cross-contamination. Handout provided. Seven noncritical violations. Inspector: Bauman.

Salad Galley, 337 St. Clair, inspected July 12. Critical violations: Critical violations: Four salads on salad line not being held at proper temperature. Salad bar must be replaced with an NSF-approved cooler that can maintain the proper internal temperature of food. The walk-in cooler was holding potentially hazardous foods above 41 degrees. The food must be maintained at 41 degrees or below to limit the growth of bacteria. Walk-in cooler was turned down. Back prep cooler not holding food at proper temperature. Cooler was turned down at time of inspection. Inspector: Kelly Ivans.

Tropics Lounge, 1483 West Sylvania, inspected July 13. Critical violations: Date mark all PHF held longer than 24 hours. Noodles and cabbage at 53-55 degrees in sliding door cooler and walk-in cooler. Product was made in the morning and must be cooled from 135 to 70 degrees in two hours then from 70-41 degrees in four hours or less. Store box of chips at least six inches off the floor. Clean and sanitize the ice machine in the bar. Seven noncritical violations. Inspector: Debbie Dacquisto.

Mike's Carryout, 408 Cleveland, inspected July 10. Critical violations: Observed bait and food stored next to each other in the walk-in cooler. Do not store bait next to food. Store bait on bottom shelf of cooler away from food. The three-compartment sink is blocked by stock. The sink must stay clean and clear for proper dishwashing.
