KO s Garden, 14241 Airport, Swanton, inspected Jan. 23. Critical violations: Observed raw chicken stored above raw beef in walk-in cooler. To prevent cross contamination which could cause a food borne illness proper food storage is needed. Handout given. Observed wiping cloths stored on counter and food contact surface between uses. To prevent food contact surfaces from contamination. Store wiping cloths in sanitizer of proper concentration. Chlorine buckets should be 50-100 ppm. Observed potentially hazardous food (PHF) in walk-in cooler without proper datemarking. At time of inspection dish machine was not dispensing enough chlorine sanitizer. Dish machine must sanitize with chlorine at 50-100 ppm to properly disinfect utensils. Inspector: Sara Becker.

Brandywine County Club, 6904 Salisbury, Monclova, inspected Jan. 23. Critical violations: Date mark all PHF, found various items in coolers without proper marking. Cross contamination present in the walk-in freezer. Found raw pork found on the same shelf in freezer. Rearrange food products to prevent cross contamination. Food product in the walk-in cooler found molded (old soup and bread). Properly datemark food and rotate to prevent molding. Food past expiration date found in walk-in cooler. Food discarded. Dishmachine at time of inspection not dispensing proper levels of sanitizer. Call service. Six noncritical violations. Inspector: Becker.

Catholic Club, 1601 Jefferson, inspected Jan. 26. Critical violations: Pizza found at 117 degrees. PHF must be held hot at 135 degrees or more to inhibit the growth of bacteria that can cause food borne illness. Provide hot holding equipment to hold pizza at proper temperatures. Rally s, 3509 Airport, inspected Jan. 23. Critical violations: Roof leaking over ice bin #2. Ice and cups removed from service. Do not use this area until roof is repaired. No sanitizer bucket observed. Sanitizer bucket must be in use daily for wiping down all food contact surfaces. Corrected. Inspector: Mike Brady.

Jefferson Express, 1220 Jefferson, inspected Jan. 24. Critical violation: Dishmachine not working correctly. High temperature is used for sanitation. It must reach 180 degrees to properly sanitize. Strip did not change to black. Dishmachine is old style with lever that must be held manually for sixty seconds. Strongly recommended to replace with more reliable equipment. Do not use until repaired. Three-compartment sink in back room must be used. Use wash, rinse, sanitize procedure. Inspector: Kelly Ivans.

11th Frame Fryer at The New Glass Bowl Lanes, 5133 Telegraph, inspected Jan. 24. Critical violation: Observed open packages of hot dogs, cans of cheese, and chili sauce without proper datemarks. Any PHF that is kept longer than 24 hours after package or can is opened requires a proper datemark. Five noncritical violations. Inspector: Cutcher.

Darla s Thai Pan, 4011 Secor, inspected Jan. 24. Critical violations: Quat sanitizer is too low at 100 ppm in the three-compartment sink. More sanitizer was added at time inspection to get correct level on concentration. Garlic in oil is a PHF and must be held cold at 41 degrees or less. Three noncritical violations. Comfort Inn East, 2930 Navarre, inspected Jan. 26. Critical violation: Observed food at unsafe temperatures. McDonalds, 14225 Airport, Swanton, inspected Jan. 30. Critical violation: All food handlers must wear proper hair restraints when working with open foods. Inspector: Becker.

Sunrise Diner, 5042 Lewis, inspected Jan. 31. Critical violations: Observed food handlers without hair restraints. All food handlers must wear a hat or hairnet to protect food from contamination. Observed employee handling toast with bare hands. No bare hand contact with ready-to-eat (RTE) food is permitted. Observed improper storage of raw animal products in prep top cooler. Raw sausage and steak above RTE foods. Store all raw animal products below all other food items. Then continue to store products according to cooking temperatures both in coolers and freezers to prevent cross contamination. Repeat violation. Observed soiled cloths on surfaces behind grill line. All damp or soiled cloths must be kept in sanitizing solution with the proper chemical concentration. Observed two flats of eggs on counter. PHF must be held cold at 45 degrees or less or hot at 135 degrees or more. Do not leave PHF at room temperature. Observed various PHF items without datemarks. Any PHF kept longer than 24 hours after being cooked, prepared, opened, or seal broken requires a proper datemark. Observed sausage gravy and potato soup held over the seven day datemarking period. Observed the reuse of single-use containers. Single-use containers must be discarded when original contents are gone. No trace of sanitizer wiping buckets observed. Repeat violation. Three noncritical violations. Inspector: Cutcher.
