Recently released inspection reports of Lucas County food-service operations:

Darlington, Nursing and Rehab, 2735 Darlington, inspected June 27. Critical violations: Observed employee rinsing his hands in the food preparation sink. Hand washing should be done properly using soap and paper towels in the hand-washing sink only. Sanitize prep sink before using. Observed raw meats stored improperly in the reach-in cooler. Store all raw meats by cooking temperatures to prevent cross contamination. One non-critical violation. Inspector: Jackie Kistler.

Asian Buffet, 2769 West Central, inspected June 27. Critical violations: Observed employee setting pan of food on the floor and then putting it back into the chest freezer directly on top of another pan of food. Do not use the floor as a work space. Keep all food off the floor to prevent contamination. Observed meats on the Mongolian buffet line held at 57 to 62 degrees. Pans were floating in water without ice. Do not place food on the line until you have turned on the cold holding unit and properly iced the top. Pans of raw meat and 2 pans of tofu were voluntarily discarded. All cold holding must be at 41 degrees or below. Observed prep top cooler on cookline holding at 49-50 degrees. All coolers must hold at 41 degrees or below. Contact maintenance to repair. Raw meats were discarded. Do not place meats or eggs in this cooler unit until it is repaired and holds at 41 degrees or below. Observed raw chicken stored above cooked foods in the reach-in cooler. Storage order handout was provided. Store raw chicken on the bottom to prevent cross contamination. Observed employee cutting melon without gloves, There is to be no bare-hand contact with ready-to-eat foods. Corrected at time of inspection. Eleven non-critical violations. Inspector: Kistler.

Carlita s Mexican & Italian Cafe, 4709 Douglas, inspected June 27. Critical violations: The indoor walk-in cooler is currently holding at 55 degrees and incapable of holding potentially hazardous food at 41 degrees or less. Contact a licensed repairman and repair. It will be reinspected in 24 hours. Do not store any potentially hazardous food in the cooler until the cooler has been reinspected. Observed steam table leftovers in walk-in cooler. Improperly cooled and out of temperature. Food was voluntarily discarded. Observed improper date marking on several prepared, potentially hazardous foods inside the indoor walk-in. Food was dated for eight days and not seven. All potentially hazardous, prepared food held over 24 hours must be labeled with a date to prevent the growth of bacteria. Observed raw chicken stored above gravy. All raw foods must be stored below ready to eat food to prevent cross contamination. Place raw chicken on lowest shelf in cooler below all other foods. Kentucky Fried Chicken, 3506 Dorr, inspected June 27. Critical violations: Replace the hole on the three-bay sink which hangs below sink water line and could allow water to backflow into clean water system. Relocate power outlet used for original sifter table. It is located directly within prep area and is touching bags of chicken and is coated with flour. Relocate to area separate from sifter table. Fifteen non-critical violations. Inspector: Debbie Dacquisto.

Toledo Market & Restaurant, 3410 Dorr, inspected June 27. Critical violations: Numerous potentially hazardous food items were found at unsafe temperatures in several different coolers. All suspect coolers must be serviced to hold food at an internal temperature of 41 degrees or below. Do not use these coolers until that time. Inspector: Steve Perrine.

Pilot Travel Center, 5820 Hagman, inspected June 26. Critical violation: Observed corn dogs in hot box display at temperature ranging from 128 to 131 degrees. To limit bacteria growth, potentially hazardous foods in hot holding must maintain 135 degrees or higher. Product reheated in microwave. Repeat violation. Observed donuts in bakery display case without ingredient labels. All baked items in self service case must have ingredient labels posted for customers to view. Obtain ingredient information from supplier. Observed no soap or paper towels at hand-sink in hot dog and coffee area. Every hand-sink must be fully stocked with soap and paper towels at all times to ensure proper hand-washing. Repeat violation. Corrected at inspection. Inspector: Kerry Cutcher.

Barney s Convenience Mart, 5821 North Detroit, inspected June 26. Critical violation: Observed food handler washing lettuce in hand-sink. Use hand-sink for hand-washing only. Food prep may only be conducted in food preparation sink in back room. Four non-critical violations. Inspector: Cutcher.

Omni Sunshine, 5950 Waterville-Swanton, inspected June 26. Pickled eggs and jalepenos found out for sale without any labeling or statement of responsibility. All products sold must be properly labeled. Inspector: Sara Becker.

Petro s Foods Inc., 5086 Douglas, inspected June 27. Critical violations: Observed deli display coolers not holding all potentially hazardous food inside them at 41 degrees or less. All potentially hazardous food must be held at 41 degrees or less to prevent the growth of bacteria. Several items in the coolers were above 41 degrees, items voluntarily discarded. Contact a licensed repairman to repair the coolers so that they hold the potentially hazardous food at 41 degrees or less. Do not store any potentially hazardous food in coolers until they are reinspected. Observed no evidence of date marking of potentially hazardous food. All prepared, potentially hazardous food must be labeled with a date if it is held over 24 hours. Food that is held at 41 degrees or less may be held for 7 days including the day it was prepared or opened. Observed a can of Raid in the bathroom. All pesticides must be applied by a licensed pest control operator. Remove the can of Raid from facility. No sanitizer bucket set up in facility. During all hours of operation a sanitizer bucket must be set up with a chemical concentration of 100 ppm chlorine or 200 ppm ammonia to properly sanitize surfaces and slicer at least every four hours. Corrected at time of inspection. No sanitizer available in the facility to properly sanitize dishes, utensils, etc. All utensils, equipment, dishware that are in use must be cleaned and sanitized at least every four hours. Provide either plain bleach or quatnary ammonia to sanitize and properly wash. Corrected at time of inspection. Inspector: Wilke.
