2 cups cooked rice
6 tablespoons flour
3 heaping tablespoons sugar
teaspoon salt
Dash of nutmeg
2 eggs
teaspoon vanilla
Vegetable oil for deep-frying
Confectioner s sugar
Cook s note: You can use a deep iron frying pan or a deeper pot for cooking.
In a bowl, combine rice, flour, sugar, baking powder, salt, and nutmeg; mix well. Add eggs and vanilla and mix well. Heat vegetable oil for deep-frying to 360 degrees.
Carefully drop rice mixture by spoonfuls into hot oil and fry until brown on both sides.
Remove from oil and a slotted spoon and drain on paper towels. Sprinkle with confectioners sugar. Serve hot.
