Recently released inspection reports of Lucas County food-service operations:

Daffy s Thirsty Duck, 5134 Lewis, inspected May 14. Critical violations: Potentially hazardous foods (PHFs) were kept on the counter at 59 degrees. All PHFs must be held cold at 41 degrees or less. Hot dog sauce thawed in the microwave, half went into hot holding and the other half went back into cooler at 80 degrees. When thawing in the microwave the entire container should be reheated and placed into hot holding. Two noncritical violations. Inspector: Kerry Cutcher.

Sahara Restaurant, 336 West Dussel, inspected May 14. Critical violations: Gyro meat on grill holding at 115 degrees. All PHFs must be held at 135 degrees or more. Dish machine is not dispensing chlorine at 50-100 ppm during final rinse. All ware washing must be done by hand until the machine is repaired and a reinspection completed. One noncritical violation. Inspector: Paul Bauman.

Toledo Speedway Lounge, 5625 Benore, inspected May 15. Critical violations: Fish being held in prep top cooler at 49 degrees. All PHFs must be held at 41 degrees or less. Meat sauce in warmer was 128 degrees. All PHFs must be held hot at 135 degrees or above. Deli meat was thawing in standing water. PHFs must never be thawed in standing water. Correct thawing methods include: under refrigeration, under cold running water, in microwave, or cook from frozen state. Five noncritical violations. Inspector: Cutcher.

Dietary Service Mulford Garden, 3000 Arlington, inspected May 15. Critical violation: No hot water available at the dishroom handsink. All handsinks require cold and hot water (100 degrees) to properly wash hands. Five noncritical violations. Inspector: Jennifer Gottschalk.

Raceway Park Concessions, Food B, 5700 Telegraph, inspected May 15. Critical violations: Food handler changed gloves after handling money without washing hands before putting on clean gloves. Food handlers must wash hands at handsink with soap and warm water after handling money and in between glove changes. Open box of hot dogs did not have a date mark. All PHFs kept longer than 24 hours must be marked with a seven-day expiration date and held at 41 degrees or less. Mold growth in ice machine, clean and sanitize machine according to manufacturer s specifications. No handsoap at handsink in ware washing area. All handsinks must have soap and paper towels at all times. Three noncritical violations. Inspector: Cutcher.

Raceway Park Clubhouse, 5700 Telegraph, inspected May 16. Critical violation: Mold growth in ice machine. Clean and sanitize according to manufacturer s specifications. Inspector: Cutcher.

Wayman Palmer Center, 2053 14th, inspected May 16. Critical violation: Fresh broccoli is in cooler and on menu but facility does not have a food preparation sink, therefore all foods must be purchased washed and ready-to-eat. Seven noncritical violations. Inspector: Debbie Dacquisto.

Kmart, 627 East Manhattan, inspected May 12. Critical violations: PHFs being held past the expiration date. All PHFs can only be held for seven days after opening or preparation, then they must be discarded. Butter was at room temperature. All PHFs must be held cold at 41 degrees or less or hot at 135 degrees or above. One noncritical violation. Inspector: Cutcher.

Papa John s Pizza, 646 Main, inspected May 12. Critical violation: No handsoap at handsink. All handsinks must be stocked with soap and paper towels at all times. Two noncritical violations. Inspector: Gottschalk.

China Star, 527 Dorr, inspected May 12. Critical violations: Chicken stored at 75 degrees. Do not let food sit out at room temperature, it must be held at 41 degrees or less or 135 degrees or above. Raw chicken being stored over frozen cooked foods. Raw foods must be stored below ready to eat foods to prevent cross contamination. Four noncritical violations. Inspector: Kelly Cipiti.

Caesar s, 725 Jefferson, inspected May 13. Critical violations: A handsink must be provided at the facility s bar area. PHFs did not have required date marking. Observed a colander of pasta in the handsink. The handsink is for hand washing only. Five noncritical violations. Inspector: Cipiti.
