Ground Round, 5806 Telegraph, inspected Nov. 21. Critical violations: Observed raw fish stored on shelf above lettuce in worktop cooler, corrected. Observed PHFs in condiment prep cooler at 44 to 45 degrees instead of 41 degrees or less; adjusted at inspection. Observed cooked rice improperly cooled and packaged in prep cooler at 51 degrees; cool rapidly to 41 degrees or less before portioning and placing in prep cooler. Observed bar 3-vat sink at 0 ppm of sanitizer; quat must be at 200 ppm or chlorine at 50-100 ppm; corrected at inspection. Five noncritical violations. Inspector: Kerry Stanley.

Elephant Bar Restaurant, 5001 Monroe, inspected Nov. 20. Critical violations: Several sanitizer buckets tested low for quat sanitizer at inspection; maintain quat at 200 ppm and keep wet wiping cloths in sanitizer when not in use. Dish machine not dispensing chlorine at inspection because of air bubble in line; check before washing dishes. Observed beans at 103 degrees after cooling over 2 hours.
