5001 Monroe, inspected Dec. 5. Critical violations: Observed ground beef stored over cuts of meat in the walk-in cooler. All ground beef must stored below whole cuts of meat to protect from contamination. Corrected at time of inspection. Observed food stored on the floor in the walk-in cooler. All food must be stored at least six inches off the floor to prevent cross contamination. The tall single-door cooler on the line is holding food at 43-44 degrees. Repair cooler so that it maintains food at proper temperatures. Ranch dressing at 42-51 degree, and egg at 53 degrees on the salad bar. All PHF items must be held cold at 41 degrees or less. Monitor the temperatures at all times. Observed a can of Raid at the bar by the sanitizing sink. Remove the insect spray and store with chemicals away from dishes and utensils to prevent contamination. All pest problems must be addressed with a licensed exterminator. 5001 Monroe, inspected Dec. 5. Critical violations: Pizzas or other PHFs held based on time instead of temperature must be marked with either a preparation time or a discard time. Foods may be held for up to four hours based on time and then must be discarded. No sanitizer detected in the three-compartment sink or in the wipe cloth buckets at time of inspection. Change santizer as often as needed to maintain quat sanitizer at 200 ppm or chlorine at 50-100 ppm. Two noncritical violations. Inspector: Sattler.

3332 West Central, inspected Dec. 8. Critical violations: Cooked potato skins are at 60 degrees at time of inspection. Once cooked , potatoes are PHF and must beheld hot at 135 degrees or more or properly cooled and held cold at 41 degrees or less. No hot water is available at any sink in the facility at time of inspection. Hot water is required for proper handwashing and warewashing. If this is not corrected in 24 hours, this facility will no longer be able to operate. Eating in the kitchen is not permitted. Observed employee food and beverage on top of an under-counter cooler. All must be eaten in the dining area or office. All employee beverages must have a cover and a straw and stored below or separate from food and food contact items. The three-compartment sink is set up incorrectly with no sanitizer. All food contact equipment must be washed in soapy water, rinsed, and then sanitized with quat or chlorine sanitizer. No dishes were being sanitized at time of inspection. This was corrected. No wipe cloth bucket was set-up at time of inspection. A wipe cloth bucket must be set-up at all times of operation for proper surface sanitizing. Wipe cloths must be stored in sanitizer solution when not in use. Corned beef, ham, and turkey are not date marked at time of inspection. All refrigerated, RTE, PHF must be properly date marked. Water is dripping from the ceiling in the dining area near the beverage station. Repair leak immediately. The soft drink gun holders at the bar are mounted directly above the ice for drinks and are not connected to drainage tubes. Observed liquid dripping from the holder into the ice at time inspection. Provide proper drainage tubes for all soft drink guns. Nine noncritical violations. Inspector: Sattler.
