Strawberry Spinach Salad
- 12 cups spinach, baby or bite-size
- 2 cups sliced strawberries
- 2 bunches sliced green onions
- 1-2 cans mandarin oranges, drained
- ¼ cup pine nuts or cook‘s choice
Orange Honey Dressing:
- Scant ½ cup orange juice
- ¼ cup honey
- 2 tablespoons canola oil
- 1 teaspoon Dijon mustard
Place the salad ingredients, except pine nuts, into a salad bowl. Shake or blend the dressing ingredients well, then pour dressing over the bowl of salad mixture. Sprinkle the nuts on top before serving.
