Cuban Rice and Beans
- 1 small onion, chopped
- 1 14-ounce can black beans, drained and rinsed
- 1/2 or 1 teaspoon cumin powder, to taste
- 1 tablespoon minced garlic
- salt and pepper to taste
- 1 8.8-ounce package Uncle Ben's Ready Rice (cooks in 90 seconds)
In a skillet sprayed with cooking spray, cook onion for about 2 minutes. Add beans, cumin, garlic, salt and pepper. Cook rice in microwave for 90 seconds, then add to skillet mixture. Heat and mix through. Serve topped with salsa.
Yield: 3-4 servings.
