Dinner Tonight: Cuban Rice and Beans

Barb Meyers of Oregon says that this recipe is “fast, good, and easy.”

Cuban Rice and Beans

  • 1 small onion, chopped
  • 1 14-ounce can black beans, drained and rinsed
  • 1/2 or 1 teaspoon cumin powder, to taste
  • 1 tablespoon minced garlic
  • salt and pepper to taste
  • 1 8.8-ounce package Uncle Ben's Ready Rice (cooks in 90 seconds)

In a skillet sprayed with cooking spray, cook onion for about 2 minutes. Add beans, cumin, garlic, salt and pepper. Cook rice in microwave for 90 seconds, then add to skillet mixture. Heat and mix through. Serve topped with salsa.

Yield: 3-4 servings.
