Bittman s Jerk Seasoning Turkey Rub

1 tablespoon allspice berries or powder

teaspoon nutmeg

1 teaspoon black peppercorns

2 teaspoons dried thyme

1 teaspoon cayenne pepper or to taste

1 tablespoon sugar

2 tablespoons salt

2 teaspoons minced garlic

2 teaspoons fresh ginger or 1 teaspoon ground ginger

If using fresh allspice berries, nutmeg pieces, peppercorns, and thyme, blend in spice grinder. Then add the rest of ingredients. Otherwise, mix all and rub evenly over bird and under skin of breast.

Yield: cup for 12 pound turkey
