Athenian Orzo (Manestra)

1 medium onion, chopped

1/2 stick butter

Pinch of salt

1/2 cup green pepper, chopped

1 cup orzo

1/4 teaspoon pepper

1 tablespoon fresh parsley, chopped

Feta cheese, crumbled, or grated romano cheese

Saute onion in 1/4 stick of butter with salt in medium saute pan. Add and saute peppers 5 minutes. Set aside. Boil orzo in a saucepan in water 30 minutes. Drain and rinse in hot water. Melt remaining 1/4 stick butter in saucepan. Add cooked orzo with onion, peppers, and pepper. Mix well. Spoon into serving dish and garnish with chopped parlsey, feta or Romano.

Yields: 6 to 8 servings
