Triangle Cheese Pies (Tiropites)

24 ounces cottage cheese

24 ounces feta, crumbled

1/2 cup parmesan or romano cheese

3 tablespoons farina or cream of rice

3 eggs, beaten

White pepper

2 pounds phyllo dough

1 pound butter, melted

Combine cheeses, farina, eggs, and a dash of pepper in bowl. Preheat oven to 375 degrees. Cut phyllo dough in half lengthwise. Lightly butter one sheet of phyllo and fold it in thirds and lightly butter top layer. Place 1 teaspoon cheese mixture at one end of the strip. Fold over corner diagonally to make a triangle. Continue folding from side to side, as a flag is folded in the shape of a triangle. Place on buttered baking sheet. Brush the top with butter.

Continue until filling is gone. Bake 20 minutes until golden.

Yields: 50 triangles
