Restaurant inspections

Recently released inspection reports of Lucas County food-service operations:

Little Generation, 1831 Bancroft, inspected June 24. Critical violation: Have food supplier provide serving utensils with each meal so that utensils can be taken to be washed, rinsed, and sanitized. One noncritical violation. Inspector: Debbie Dacquisto.

Al Saher, 1150 South McCord, inspected June 25. Critical violations: Observed potentially hazardous foods (PHF) at 44-45 degrees. All PHF must be held cold at 41 degrees or less. Have cooler checked. Observed PHF not properly date marked. Inspector: Mike Brady.

Cold Fusion Creamery, 3136 Markway, inspected June 25. Critical violation: Observed employee s sandwich and beverage for lunch stored next to the hand sink. No eating may done in the kitchen, employee may only eat in the dining area. Three noncritical violations. Inspector: Gillian Wilke.

Nick and Jimmy s Bar and Grill, 4956 Monroe, inspected June 25. Critical violations: Observed improper storage order in the short-order prep-top cooler and the main walk-in cooler. Raw tuna was stored above bologna in the prep-top and raw steak was stored above cooked chicken in the walk-in. Observed several prepared items holding in the walk-in cooler and couple of smaller coolers without date marking. All prepared, PHF must be properly date marked if held more than 24 hours. Observed ash tray with cigarette butts on beer cooler behind the back bar. There shall be no smoking behind the bar at anytime. The cheesecake in the display cooler is holding at 43 degrees, the cooler itself is at 46 degrees, the pizza prep-top cooler is between 42 and 46 degrees, and the prep-top cooler on the cook line is holding eggs and cheese at 46 degrees. All potentially hazardous foods must beheld at 41 degrees or less to prevent bacteria growth. The cheese sauce/soup in the walk-in cooler and the small bags of rice in the prep-top cooler were improperly cooled. All PHF must be cooled from 135-70 degrees within two hours and then from 70-41 degrees in the next four hours to prevent bacteria growth. The walk-in beer cooler is holding PHF at 43-44 degrees. Adjust the cooler temperature so that it maintains proper temperature. Fourteen noncritical violations. Inspector: Wilke.

Rouge Bistro, 6060 Renaissance Place, Sylvania, inspected June 25. Critical violation: Label all spray chemical bottles for proper identification. One noncritical violation. Inspector: Tester.

Trattoria Sofo, 5703 Main, Sylvania, inspected June 25. Five noncritical violations. Inspector: Testor.

Serenity Fish Market, 2015 Dorr, inspected June 25. Critical violation: Pizza in warmer at 89-90 degrees. PHF food must be held hot at 135 degrees or more to inhibit bacteria growth that can cause food-borne illness. Pizza removed from service. Five noncritical violations. Inspector: Dacquisto.

Star Diner II, 457 Dussel, Maumee, inspected June 25. Critical violation: Salad dressing on ice at 53 degrees. No ice in holding pan. All PHF held cold must maintain proper temperature of 41 degrees or less. Two noncritical violations. Inspector: Paul Bauman.

Sbarro, 5001 Monroe, inspected June 26. Critical violations: Pasta salad at 57 degrees in the display cold-holding unit. All PHF must be held cold at 41 degrees or less at all times. Provide deeper pans for food that will touch the cold plate. Pizza and stromboli are held based on time, not temperature. Foods must be marked or identified to indicate the time that food should be removed. Food removed from temperature control. Pizza made at separate times must be timed individually. Written procedure must be in place for this practice. This is a repeat violation. Quat sanitizer in wipe cloth bucket is too low. Change sanitizer as often as needed to maintain at 200 ppm. Store wet cloths in sanitizer when not in use. Three noncritical violations. Inspector: Kelly Sattler.

Maumee Little League Baseball, 1313 Eastfield, Maumee, inspected June 28. Critical violations: Hair restraints must be worn by all employees handling food in the stand. Date mark all PHF, hot dogs opened in the cooler without a date mark. Three noncritical violations. Inspector: Sara Becker.

Maumee Little League, 417 Ford, Maumee, inspected June 28. Critical violations: All PHF opened must be properly date marked. All food employees in stand must wear hair restraints. One noncritical violation. Inspector: Becker.

Beaner s Coffee, 1515 South Reynolds, inspected June 27. Critical violations: Quaternary ammonia test strips needed. Two noncritical violations. Inspector: Brady.

Doc Watson s, 1515 South Byrne, inpsected June 27. Critical violation: Observed employee with lip ring in food-prep area. Items such as rings, toothpicks, straws etc. should not be in mouth during food prep. Two noncritical violations. Inspector: Brady.

Subway, 3107 Navarre, Oregon, inspected June 27. Critical violations: Observed sanitizer at 0 ppm in sanitizer bucket. Sanitizer must be at 200 ppm to properly sanitize. Meatball sauce at unsafe temperature. All PHF must be maintained at proper hot or cold temperatures. Inspector: Julie Nye.

Stop and Go, 2345 Laskey, inspected June 23. Critical violation: Observed improper storage order in the walk-in cooler. Eggs and raw bacon stored above milk and juice and other ready-to-eat (RTE) foods. Store all RTE food above raw meats and eggs to prevent cross contamination. Two noncritical violations. Inspector: Wilke.

Toledo Food Center, 303 Main, Inspected June 24. Critical violation: Observed raw ground sausage over raw sliced bacon and meat. Raw ground product must be stored below whole meat and sliced bacon. Repeat violation; correct immediately. Observed bottle of gear oil stored above carry-out tray. Do not store chemicals above containers or utensils. Place chemicals in area separate from food utensils and wrappers to protect from contamination. Observed the grinder plate in the meat room hand sink with meat on it. Do not place items in the hand sink. All utensils that must be washed must be placed on the dirty side of the three-compartment sink. No date marking observed on open deli meats. No hand soap available in the produce room hand sink. Eight noncritical violations. Six noncritical violations. Inspector: Gottschalk.
