Parents — particularly as they get older — typically don't need (or want) gifts they can't eat, drink, or use, so why not keep things practical? Think of what they enjoy and build on that, whether it's travel, dining out, or exercise. If you're not into practical, think of some splurge gifts that your parents would enjoy but probably wouldn't spend the money on for themselves.
