Swiss Steak

2 pounds round steak

2 tablespoons flour

1/2 teaspoon salt

Dash pepper

1 tablespoon oil

1 medium onion, chopped

2 to 3 stalks celery, chopped

1/4 cup green pepper, chopped

1 cup tomatoes, peeled

2 carrots, sliced, optional

2 cups water

8 potatoes, boiled and mashed, optional

Mix flour, salt, and pepper in small bowl. Rub into round steak. Cut into serving sizes. Brown meat in oil in skillet over medium heat. In slow cooker, transfer meat and pour all of vegetables except potatoes over steak and add water. Cover and cook on low for 8 hours. Serve with potatoes if desired. (Steak with vegetables may also be simmered covered on stove top for 1 hour or until tender.)

Yield: Serves 4
