Flower Memorial Hospital-main kitchen lower level, 5200 Harroun, Sylvania, inspected Sept. 15. Critical violation: Tuna salad in the grill area 47 degrees at time of inspection. To eliminate growth of food-borne bacteria, all potentially hazardous foods must be held at 41 degrees or less at all times. Product must be kept in metal pan with prep top closed at slow times. All prepared food and opened containers must be labeled with the date opened or prepared and the discard date.
