Kentucky Fried Chicken, 2902 Monroe, inspected Sept. 22. The pop machines at the drive-thru and the customer self service need to be replaced. This is a repeat violation. The ice machine is draining water into the ice box constantly. Call for professional service for this unit and provide copy of call for file. Keep paper towels stocked at handsink at all times. Provide a working paper towel holder for the kitchen handsink. Drain plugs for the three-bay sink are missing. Install permanent lever-type drain baskets for all three sinks. The cut melon in the produce walk in was 47 degrees. All potentially hazardous food must be held at 41 degrees or less to prevent bacteria growth. The cheesecake case and the long-meat case were both holding potentially hazardous food above 41 degrees. All PHF must be held at 41 degrees or less to prevent the growth of bacteria. Ponderosa Steakhouse, 2080 Woodville, inspected Sept. 23. Critical violations: Observed food at unsafe temperature: chicken at 51 degrees, fish at 47 degrees, rib tips at 47 degrees, and steak at 49 degrees. All PHF must be held at 41 degrees or less to prevent bacteria growth that can cause a food-borne disease. All chicken, fish, steak, rib tips, and hamburger was discarded. Repair cooler so it can maintain 41 degrees or less and food can be held at safe temperatures. Observed food at unsafe temperatures: sour cream 45 degrees. All PHF must be held at 41 degrees or less to prevent bacteria growth. Observed improper storage order of raw chicken over fish and raw hamburger over steak; follow proper storage order to prevent cross contamination. Observed improper date marking. All potentially hazardous ready-to-eat food items must have a proper date mark to indicate a discard date. This is to limit bacteria growth that can cause a food-borne disease. Observed several cups and single-use cups stored inside food products. All scoops must be commercial grade and have a handle up out of the food produce. This is to prevent bare- hand contact. Observed food at unsafe temperatures: ice cream at 57 degrees. All PHF must remain at 41 degrees or less to prevent bacteria growth. Repair ice cream machine so it can hold food at 41 degrees of less. Observed a handsink blocked in prep room with a bucket. All handsinks must remain free from blockage to allow for proper handwashing. Observed severe build up on both ice machines; thoroughly clean inside and outside of ice machine. Observed several rags on the countertops. All rags must be stored inside a sanitizer bucket; bacteria can grow on rags on the counter. Store in sanitizer to prevent bacteria growth. Observed dish washer handling dirty dishes and then clean dishes without properly washing hands. When handling dirty dishes one must always wash hands before handling clean dishes to prevent contamination of clean dishes. Eleven noncritical violations. Inspector: Julie Nye.
