Gourmet Burger with Mushroom Wine Sauce

Eileen Cousino's Gourmet Burger is an open-face sandwich served on a hearty slice of french bread.

1 pound ground sirloin, formed into 1/4-pound patties

2 tablespoons butter

2 tablespoons olive oil

1 tablespoon chopped garlic

1 cup thin sliced mushrooms

1 cup thin sliced Vidalia onion

1/4 cup beef stock

1/4 cup red wine

1 tablespoon Worcestershire sauce

1 tablespoon A-1 Sauce

2 tablespoons Grey Poupon

4 slices pepper jack cheese or cheese of your choice

4 thick slices of toasted french bread

Heat large skillet to 350 degrees. Heat butter and olive oil. Add chopped garlic, mushrooms, and onion and saute until onions are translucent. Move to one side of the pan and add the four meat patties. Brown on both sides. Add stock, wine, sauces, and mustard. Cover and simmer 3 minutes. Turn meat patties over and continue to cook an additional 3 minutes.

Top each pattie with a slice of cheese. Replace lid and simmer for 3 minutes. Place burger on slice of toasted french bread topped with mushroom wine sauce.

Yield: 4 servings
