Breakfast Burrito

cup sour cream

6 12-inch fl our tortillas

3 cups cooked rice

pound smoked sausage, cooked and

crumbled

cup shredded jalapeno jack cheese

6 eggs, scrambled

cup chopped green onions

Vegetable cooking spray

Olive oil or butter

Fresh Tomato Salsa (see recipe above)

Sour cream for garnish

Spread sour cream evenly onto 6 tortillas. In a large bowl,

combine rice, sausage, cheese, eggs, and onions. Spoon mixture

onto tortilla. Fold ends of tortilla toward center and roll

up. Coat 13 by 9-inch pan with vegetable cooking spray. Place

burritos in baking dish and brush with light coating of olive

oil or melted butter. Bake in 350 degree oven for 15 minutes.

Serve with fresh tomato salsa and sour cream.

Yield: 6 servings
