Chicken Saute ingredients (see recipe above)
cup chicken broth
2 tablespoons strained fresh lemon juice
2 tablespoons capers, rinsed and drained
1 tablespoon butter
Chopped flat-leaf parsley
Saute chicken as directed above; transfer chicken to platter. Add chicken broth, lemon juice, and capers to drippings in skillet. Cook over medium-high heat until reduced by half. Whisk in butter. Return chicken to pan; season to taste with salt and pepper. Cook until heated through. Serve chicken topped with sauce and parsley.
Yield: 4 servings
